The Right Course offers our learners industry-led training and opportunities for employment. By transforming staff restaurants within prisons into inspiring highstreet-like operations and inviting industry volunteers to teach, interact and work alongside the program’s candidates, we deliver inspiring practical training in real-life settings.

Bertie’s – at HMP Lincoln with PeoplePlus
Bwyty Cyfle and Caffi Cyfle – at HMP Berwyn with NOVUS Cambria
The Secret Diner – at HMP Sudbury
The Old Mess – at HMP Hindley
We also provide employment support and inspirational events to: HMP Foston Hall and HMP Hollesley Bay.
Coming Soon: new training restaurants at HMP Drake Hall (our first female prison) and HMP Channings Wood.
Through enhanced training and supported routes to employment, The Right Course works with prison staff, training providers and industry experts to prepare prisoners to secure employment upon release.
The Right Course provides a bespoke skills and behaviours curriculum, operational models, quality control and, industry links, as well as coordinates masterclasses, industry volunteers and job opportunities, to enhance the 12-week training programme to get learners job ready. Through access to existing prison budgets, grant support, fundraising and donations in-kind, facilities are improved, creating an authentic and welcoming restaurant, and a hardship fund has been set up to aid those released to secure employment. The day-to-day operation of the restaurants is undertaken by the prison and accredited training towards a level-2 NVQ is provided by the on-site education provider.
Showcase events are another integral part to The Right Course. The potential and capacity of our learners is demonstrated by a guest chef working alongside the team to deliver a top dining experience for guests. Fred Sirieix leads the front of house learners, encouraging and sharing his years of hospitality experience. The Right Course invites numerous potential employers and partners to use this as a unique opportunity to link employers and learners within the walls of the prisons. Showcase events have included Phil Branch from Hawksmoor, Chris Galvin from Galvin at Windows, Chris Thompson from Duck & Waffle, and José Pizarro.
