The Right Course was devised by Fred Sirieix after a visit to HMP/YOI Isis in 2017. It began with a review of operations, upgrading the space and with a successful pop-up restaurant in the prison, whereby they converted the staff canteen into a trendy eating establishment open to VIP guests. Fred felt that hospitality can play a key part in rehabilitation in prisons across the country. Since then, the qualification delivery has developed into a complete pathway into the hospitality industry.

Keen to ensure our learners experience a busy work environment the Prison developed the idea of adding a community kitchen to operations, adding to learners’ experiences, whilst giving back to the community. Currently, the learners are producing 250-300 meals a month for the local community as part of an ongoing project, all while catering for the prison staff 4 days a week. The Right Course is collaborating with HMP/YOI Isis, Hawksmoor, and Food Behind Bars. Learners are then able to learn more about nutrition as well explore potential for opening their own street food business through our partnership with Kerb.
The restaurant space at HMP/YOI Isis has recently reopened under the day-to-day oversight of Food Behind Bars. Under their guidance learners operate the restaurant for staff to enjoy, as well as deliver community meals. We continue to support learners into employment upon release.; inspiring them to use the skills that they have developed to start a career in the sector.
Masterclasses have also been an integral part of the learner journey at HMP/YOI Isis, with visits from Hawksmoor and Hilton. We are very grateful to Chris Galvin, José Pizarro, Chris Thompson and Joo Won for giving their time and sharing their expertise to make these events successful.
